Grilled Bison Kabobs with Summer Veggies

These grilled bison kabobs are the perfect way to serve clean, lean protein with farm fresh veggies.
Marinated in balsamic and garlic, these paleo friendly grilled bison kabob skewers are ideal for a light and flavorful summer meal.

Prep Time: 25 minutes (includes 15 min skewering)
Marinate Time: 1–2 hours
Cook Time: 10–12 minutes
Rest Time: 5 minutes
Total Time: ~1 hour 45 minutes (with marinating)
Ingredients:
2 lbs bison sirloin or kabob meat, cut into 1.5” cubes
1 red bell pepper, chopped
1 zucchini, sliced into thick coins
1 red onion, quartered
1 cup cherry tomatoes
Skewers (wooden soaked or metal)
Marinade:
¼ cup olive oil
2 tbsp balsamic vinegar
1 tbsp Dijon mustard
2 cloves garlic, minced
1 tsp dried oregano
Salt & pepper to taste
Instructions:
Whisk marinade ingredients in a bowl. Add bison cubes and marinate for 1–2 hours.
Toss veggies lightly with olive oil, salt, and pepper.
Assemble skewers, alternating meat and veggies.
Grill over medium high heat, turning every 2–3 minutes, until bison is medium rare to medium (135–145°F), about 10–12 minutes total.
Rest for 5 minutes before serving.
