Ingredients:
2.5 lb bison chuck roast
3 large carrots, peeled & cut into chunks
1 large onion, quartered
3 cloves garlic, minced
2 celery stalks, chopped
3/4 cup bison broth or large marrow bone
1/3 cup red wine (optional, adds rich flavor)
1.5 tbsp tomato paste
1.5 tbsp olive oil
1.5 tsp salt
3/4 tsp black pepper
3/4 tsp smoked paprika
3/4 tsp dried thyme
3/4 tsp dried rosemary
1 bay leaf
1/2 tsp crushed red pepper flakes (optional)
1.5 tbsp Worcestershire sauce
Instructions:
Sear the Bison (Optional but Flavorful)
a. Heat olive oil in a skillet over medium-high heat.
b. Season the bison chuck roast with salt, pepper, smoked paprika, thyme, and rosemary.
c. Sear on all sides until browned (2–3 minutes per side) to lock in flavor.
Prep the Crock Pot
a. Layer carrots, onion, celery, and garlic at the bottom of the crock pot.
b. Place the seared roast on top of the vegetables.
Add Liquids & Seasoning
a. In a small bowl, whisk together broth, red wine, tomato paste, Worcestershire sauce, remaining salt, pepper, and red pepper flakes.
b. Pour the mixture over the roast and vegetables.
c. Add the bay leaf to the crock pot.
Slow Cook the Roast
a. Cook on low for approximately 5–6 hours or high for approximately 3–3.5 hours until the bison is tender and easily shreds with a fork.
Serve & Enjoy
a. Slice or shred the bison roast.
b. Serve with the cooked vegetables.
